Job Summary

The Chef de Pass (Πασαδόρος) is responsible for coordinating and controlling the flow of dishes between the kitchen and service team, ensuring that all food is presented, garnished, and served according to the restaurant’s quality and timing standards. This role requires strong communication skills, attention to detail, and the ability to work efficiently in a fast-paced environment.

Key Duties and Responsibilities

• Coordinate the smooth flow of orders between kitchen sections and service staff.


• Ensure all dishes are prepared according to presentation, quality, and timing standards before leaving the kitchen.


• Check plates for accuracy, portioning, cleanliness, and garnish.


• Communicate effectively with chefs and waitstaff to ensure efficient service.


• Monitor ticket times and prioritize orders during busy service periods.


• Ensure special dietary requests and guest modifications are correctly executed.


• Organize and control the pass area, maintaining cleanliness and order at all times.


• Assist in minimizing delays, mistakes, and food wastage during service.


• Support the kitchen team to maintain high operational standards and guest satisfaction.


• Ensure compliance with hygiene, health, and safety regulations.


• Handle pressure professionally while maintaining excellent teamwork and communication.


• Report any operational issues or shortages to the kitchen management team.

Skills, Experience & Educational Requirements

• Previous experience in a kitchen, food service, or similar hospitality role preferred.


• Good understanding of kitchen operations and food service procedures.


• Ability to work efficiently in a fast-paced and high-pressure environment.


• Strong communication and organizational skills.
